Shoo Fly Pie Words and music by Tom Hench Step 1: Here’s a recipe from the Pennsylvania Dutch Pretty easy to make, don’t take much When it’s done you’re gonna know why I can’t get enough of that shoo fly pie Heat up your oven - 375 Put a couple of mixin’ bowls side by side Get a pie crust, from scratch or the store Eight inch pie pan no less no more The bowl on the left’s for the crumb toppin’ Add a cup of flour you got when you were shoppin’ Half cup brown sugar don’t pack it too hard Then a quarter cup of butter, shortenin’, or lard One thing more – we’ll be finished soon Put in a little baking soda – half a teaspoon Now work it all together until it becomes A sweet and tasty mix of nice little crumbs Chorus: You can have ‘em dry or with a wet bottom Doesn’t really matter as long as you got ‘em The one thing I need to be happy guy ‘sa big old slice of that shoo fly pie Step 2: Set that bowl aside - it’s time for the fillin’ Might be kinda messy so please no spillin’! Boiling water, baking soda first step in the batter A cup the former, half a teaspoon the latter Mix these two together in the bowl on the right ‘Till the baking soda disappears right outta sight Add dark brown sugar, half a cup, if you please Same amount of dark molasses – This recipe’s a breeze! Stir it all together in a nice smooth slurry Take your time, stay cool, there’s no need to hurry Then pour it in the crust and when you stop Add the bowl of crumbs sprinkled smooth across the top Pop it in the oven – forty minutes oughta do it Check it every now and then – don’t wanna overdo it Take it out and let it cool down just a bit Your pie is done! It’s sure to be a hit!
